You have to add citrus to the home made pasta sauce to neutralize the acidity of the tomatoes. If you don't do it, the sauce will taste "off". If you look at the ingredients of pre made pasta sauce, they ALL include citrus.*even the super cheap cans.

You can use a small amount of lemon juice, orange juice, lime juice, citric acid. Trust me, your sauce will taste tons better! By small amount, I mean 1 Teaspoon per 2-3 servings of sauce.

I don't know how you can neutralize acid with more acid. I've heard of adding a small amount of sugar or a sweet ingredient to the pasta sauce to make it less acidic.

pasta is the best food, it's delicious, affordable and most cuisines whether it's Asian or European have a bunch of different recipes you can make with it. There is a food called turoscsusza (Hungarian pasta dish with cottage cheese, sour cream and bacon) which I have totally veganized :)

Jay Roger I didn’t say cheaper than home but cheaper than $20 bucks. I live in Argentina, unfortunately. Devaluation and inflation makes it sound cheap in usd but salaries are too low here.

For an appetizer, you could serve the sliced up baguette and a plate with olive oil and herbs. Something quick, affordable (as long as you keep olive oil stocked!) and "classy" 😊

Every step towards vegan is an ethical one that should be encouraged! If you need more ideas for plant based meals and more range, try veggierose, veganricha, hot for food (not as budget friendly but very innovative), sweet simple vegan, and moresaltplease (low carb ideas). Enjoy your plant based journey 😁. Side note: best vegan yogurt IMO is Lavva but I find plain forager is really good for cooking/making sauces without using coconut which I hate.

I got my eye on those bean balls!! I wonder if the aqua-fava (garbanzo juice) would have helped fluff the coconut milk?
