      The way most people make carbonara (probably including those chefs who critiqued you) will inevitably turn the dish into pasta with scrambled eggs regardless of how quickly you cook the eggs. The "scientific" way to give the egg a creamy texture is to heat the eggs at a temperature between 61 and 65 degrees Celsius so that the white will fully coagulate but the yolk will not.     honestly i’m so tired of italians being the bad guys of the situation. i’ve worked several years in restaurants and diners and y’all say that italians are always judging, but NEW YORKERS are wayyy worse! i’m from rome and i live in new york (long island) and people are so fucking mean here! always complaining about food that is not even culturally american... at least in italy if you go to a restaurant they don’t return the food to the kitchen. you don’t like it? cazzi tua (we say in rome) which means ‘that’s your problem’

      adding garlic is not traditional, you are right. but think that may restaurant make pasta with eggs, parmigiano, pancetta, cream, chicken, mushrooms and onion and call it ITALIAN CARBONARA... that is what makes italians upset.. adding a bit of garlic and using bacon is not a big deal.. even dough I don't see the egg and garlic combo working too well...

                                Ready to hear the most bastardized version of carbonara (thats the most delicious)? It is NOT advised to anyone who needs to eat healthy but rather a once in a blue moon treat.

                                Crisp pancetta or bacon in a pan, then add diced onion and garlic and cook over low heat until translucent. Now you add half a stick of butter (I learned this recipe from my mom but it may have been paula deen dressed as my mother. I'm not sure). Melt. Then add half a bottle of wine and and 2 cups of chicken stock. Now reduce until it makes a sauce that can coat the back of a spoon (like really really reduced.) Takes about 30 min to an hour. The slower you go the more Flavorful it is. Cook you noodles now. Add noodles to pan with one cup of pasta water. Now add you egg mixture (same as babish but with half a cup of heavy cream and salt, pepper, and nutmeg). Mix. Top with parsley

                                                          Almost get it man but the salt at the end in to cooked pasta is unforgivable, all the salt you should need is in the water.

                                                                As a half Italian, I can't really judge, however since Carbonara is my favorite food I quickly discovered that a lot of Italians do it in a slightly different way, depending on family tradition and region, of course. The most important thing is NOT TO PUT IN ANY CREAM BECAUSE EVERY ITALIAN WILL GO CRAZY-MAFIA-BOSS-MODE AND PULVERIZE YOU!

                                                                            You can't accept critics. There's any "classical" or "modern" version and you made the Carbonara in a wrong way, but you know what? You're not the only one and you won't be the last. Don't be immature, accept the critics and learn how to cook the real Carbonara Pasta. If you don't know the real receipt of something, just don't create a new version of it on Youtube saying that it's the original one.
