  • Okay, it's April 2nd, fun's over. This week, for reals this time, we're making onigiri: the breakfasty-lunchy-snack, ubiquitous in Japan, and virtually unheard of here in the US. As such, some committee of suits saw fit to Americanize their portrayal on Pokémon, and a generation of these United States grew up thinking they were donuts...and the bastards made ten hundred billion dollars. Was it worth it, 4Kids Entertainment? Oh, it was? No yeah you're right.

                    you messed up when you made it sushi rice. you use the same rice but don't add the rice wine and sugar to the rice. Onigiri is usually made with plane rice. The idea is to emphasize the taste of the filling. You can use salt with the rice but you don't make it sushi rice that is for Sushi not Onigiri.

                          When I grew up in Japan, to get the shape of the onigiri, we were taught to put the rice in the cling wrap and shape the triangle there and leave it for at least a minute or two. That might help

                                                    One reason you're not making great shapes is because you're also adding things not commonly found in onigiri, such as rice vinegar. Rice preparation is pretty plain, with most of the flavors found in the filling. One suggestion I have is you can use a ziplock bag to form the shapes so the rice doesn't stick to your hands.

                                                    Another reason you might be having trouble with shapes is because you're not really using the correct type of rice, but that's not really your fault. The rice commonly used for onigiri are koshihikari and akitakomachi, though neither exactly easy to find in the US. The type of rice you're likely using is Calrose, which doesn't quite have the same texture, flavor, and stickiness of the koshihikari. What I mean by that is, koshihikari by itself already has a pretty strong flavor not found in any other rice so you don't have to season it, and its stickiness is much, much stronger than most grains, capable of holding many complex shapes.

                                                    Nonetheless, I'm impressed. Most of my American friends still can't make proper shaped onigiris after I taught them so many times lol.

                                                          I love the umeboshi ones and the Japanese mayo and tuna ones. The store bought kelp ones are pretty good, too. So is the salted salmon flakes. Most people at home make them in plastic wrap and there is a trick to making them triangular, but I'm still working on that, with some help from the chef at my school.
