Binging with Babish: Tamales from Coco

  • Pixar's latest laser-guided annihilator of heartstrings, Coco, starts off in the sunny Mexican town of Santa Cecilia, where 12-year-old Miguel's abulea does two things very well: staving off music of any kind, and slinging tamales. These little packets of south-of-the-border love can be tricky and time-consuming, but make for the perfect Oscar party snack next week when we watch Coco inevitably lose the trophy to Boss Baby.

    *If you leave your pork to marinate overnight, be sure not to leave it in foil and use an enamel or glass vessel instead.

                              I dated a half Latina girl for a while. I asked her if her mother (who always made us authentic Mexican food cause she is from Mexico City) made tamales for Christmas. She said tamales are usually made in poorer areas of Mexico whereas wealthier areas like Mexico City they traditionally make various soups like Pozole, sorry if I misspelled that. She said tamales are a sign that your family is poor in Mexico. Also, apparently people in Mexico don't like people from Mexico City.

                                              Put aside some of that marinade you used for the pork into the masa. So the tamales wont look so white. But honestly was pretty damn good other then the spices missing in the dough and not having the cumin seeds toasted and other thing toasted like you were pretty spot on.

                                                      You could’ve trimmed the fat off of the pork shoulder, put it in the fridge, cut it into cubes, put it in a pot with 1/3 cup of water, put it in a 300 degree oven checking on it every 30 minutes to mash it with a potato masher until all that can melt has melted, and strain to separate the liquid fat from the solid residue

                                                      That way you wouldn’t need to spend money on both the pork and the lard you could buy one and get both

                                                                the sad part of watching these videos is, even though I could buy Babish's book and get the recipes, I'd never be able to make any of these recipes - no way I'd find corn husks at my local supermarket and I don't think they've even heard of masa harina, let alone stock it on the shelves. Still, listening to Babish is very soothing and I think I'll keep watching just for that. :-)
