                          I love Asian cultures. Many are very old, rich in history. And I love Chinese food, in all of it's various forms! Yummm

                            I'm a Coonass (slang term for a Cajun) and in a standard sized crawfish pot I get it up to a rolling boil drop in about 1 lb. of butter flavored Crisco, 8 oz. of Zatarain's liquid concentrated shrimp & crab boil seasoning, about 1/2 cup of a seasoning salt I blend (I got the recipe from my dad....he was friends with Tony Chachere from back in the day when my dad was always at oil & gas company cookouts in the 1960s & 1970s and Tony would have people at his hunting/fishing camp on in the Atchafalaya Basin near Opelousas....Tony would always say, "I'm gonna make y'all cry, this is so good"....well, after my dad had gotten his own blend down at a cookout he was doing for his company, Tony came up to him and said, "You made me cry with your blend tonight". He told my dad that he should market it. This was reiterated by countless people over the years. However, it was just always something we had to use, and it was just a hobby for dad. The most we did was give bottles to people for gifts and such, but my dad was a finance/accounting exec in the energy field (oil & gas), and he's a workaholic (he still goes to work at 0500 and according to my mom when we're on the phone, he still doesn't get home until 1730 on average, and he is in his early 80's). We never took family vacations because he never took time off, so needless to say he never ventured into the spice trade, professionally. There are a few restaurants where the exec. chef uses it, as they learned about it, tried it and asked if they could buy some. Dad just gives them as much as they want/need for free. I digress - So, standard size crawfish (seafood) boiling pot, get water to heavy rolling boil, add 1 lb. of butter flavored Crisco, 8 oz. of Zatarain's liquid concentrate shrimp and crab boil seasoning. Then I start my potatoes, at the right time add my corn (and my lil' pièce de résistance is that I also boil artichokes...a little something I picked up from a college buddy of mine years back when I was doing a boil for a friend's law school classmates while I was a bit younger and still doing my undergrad), then I add my crawfish which I've purged in saltwater several times until the water stays clear, when each batch is done I spread it out over a table with paper spread out and then throw on a liberal amount of my dad's seasoning salt, and keep cooking until I have enough to put in coolers to stay warm for more people showing up later and if lucky, still have enough to take home and take the tails off to freeze so I can make some étouffée, jambalaya, or thaw it out and fry some up for Po Boy's if I also have good oysters I can fry (But, I haven't had fried food since my mid twenties, so it's been about 20 years since I've eaten anything fried....but, I love to entertain). 

                            On topic with the video, I really like the fusion of Cajun and Vietnamese food. I had a girlfriend in college who introduced me to Pho (and I could see the French influence as it was a stew of a bunch of stew, just without a roux for a base, no okra, and instead of rice their are noodles). I also saw the Bánh mì on the menu and saw that it was served on a Crusty French Bread loaf and had a lot more vegetables, but was influenced by the French colonial background of the Vietnamese cuisine. So, I've played around with some fusion dishes and I like to keep in shape and eat healthy so it allows me to have a bit of the guilty pleasure Cajun food I loved as a boy/young man, but is still healthy for my almost middle aged body to enjoy, digest well, and not interfere with my exercise routine, etc.

                            Next time I go to New Orleans, maybe I'll go to Carnival this year the week before Lundi Gras & Mardi Gras.

                                                                This community is amazing, pulling themselves up after Hurricane Katrina with no help from the city or state. The city placed a hazardous waste dump right next to them and still they persevered. The mayor of NO at the time refused to go to the celebration of the hurricane recovery. These are the models for the immigrants the US needs and wants.

                                                                              This is weird. This video suggests that Viet-Cajun is embraced in NOLA, but David Chang's episode on Crawfish for Ugly Delicious suggests that it barely exists in NOLA and that locals reject it because of a stubborn (and frankly stupid) adherence to tradition. Which is true?

                                                                                              We were just on vacation in New Orleans. We drove out to two Vietnamese restaurants while we were there to eat. Both were superior!!!!!! Pho Bang and Ba Mien!!!!!!!!!!!!
