    This week on Basics, I'm taking another look at our beloved pizza and showing you how to make great pan pizza at home using a cast iron skillet, glass pie pan, or rimmed baking sheet.

    Ingredients & Shopping List
    + For the Pizza Dough (makes two 10-inch crusts):
    16 ounces flour, plus more for work surface
    2 tsp kosher salt
    2 1/4 tsp active dry yeast
    11 ounces room temperature water
    Olive oil

    + For the tomato sauce:
    1 28-ounce can of peeled San Marzano tomatoes
    2-3 cloves garlic
    Dried oregano and basil
    Red pepper flakes
    Kosher salt
    Freshly ground pepper
    Olive oil (optional)

    + Other toppings:
    Natural casing pepperoni, thinly sliced
    Low moisture, full fat mozzarella
    Fresh basil
    Freshly grated parmesan, for serving

    + Special equipment:
    Cast iron pan
    Glass pie pan
    Rimmed baking sheet (quarter size)
    Food processor or immersion blender for tomato sauce (optional)

      Ya know, I've been making pizza for about 40 years and never put the toppings on top of the cheese. That just seems barbaric and your cheese doesn't have the right crust when you do. When did people start putting the topping on the cheese, or is my family just weird?

                                    @whats the point but I was expecting it to be cooked in a pan on the stove. A no-oven recipe.

                                  Am I the only one who followed the ingredients/instructions for the dough for it to be too runny and look nothing like the video. Ended up having to put another 8oz of flour in - fingers crossed haha

                                        These looked underbaked to me, are you sure that first one was really done? If you are going to use a glass cooking vessel, I would recommend cooking covered to get everything up to temperature and uncovered for desired brownness.

                                          Sorry, but the comparison of that lousy Blue Apron zucchini pizza to Babish's homemade buttery crust, piping hot cheese, pepperonni pizza was a huge advertisement of why NOT to bother getting Blue Apron!

                                              So slight problem with your tomato sauce... Blender!! Doing that emulsifies the tomatoes which is what YOU DON'T WANT when it comes to sauce. Minor suggestion from years (32 to be exact) of experience at being Italian. Squeeze all the juice out of the San Marzano can... like every drop until your just left with the weird cartilage tissue of the tomatoes. Then take that gunky non-juice pulp then use a hand blender, food processor or what have you that can be emulsified this will keep all that sauce pure and breakdown the chunky bits into sauce (unless you like it chunky of course :) . ALL of this btw can be skipped if you just get a food mill and turn it into a sauce instantly. The grandma looked mazing btw.

                                                                    I bake with the pan on a pizza stone in the bottom of the oven. If the top is done but the bottom still isn't crisp enough, finish on stovetop.

                                                                  kinda disappointed after ive watched half the video, i thought pan pizza means, no oven pizza, hoping i could still make pizza with my roommates as were not having an oven right now, guess it was nice still though and wanna try that too but can you make a no oven pizza just as good?

                                                                          I'm trying this today and realize I am in Denver...will altitude play a difference in measurements or cook time? My "dough" was a bit wet so i added more flour till it looked the consistency of yours. Hope that was right

                                                                                  If you have good mozzarella, I recommend putting it right out of the oven. It will keep the flavors and create a cold warm effect
