                        Why bother put the "stuffing" in the turkey at all. It doesn't get the turkey flavour, and you don't even fully cook it in the Turkey.

                                                            please make dressing instead of that stuffing bull crap. it’s the same thing but you use cornbread instead of sandwich bread and you put turkey in it. you also don’t cook it inside of the bird. that’s just silly. trust me this dressing looks and tastes way better

                                                                So, one place I greatly deviate from this sort of recipe is in the cooking rack. I see people use racks. I see people create racks as in this video. Personally, I roast my turkeys on a cookie sheet, lined with a couple layers of foil, and then I put the leftover celery, carrots, and a rough-chopped onion underneath.
                                                                In the video, the stuffing calls for 2 ribs of celery. I don't know anywhere that sells individual ribs of celery. It's always in a bunch and it costs like a dollar. Carrots, if you use them in your stuffing (which I do), also come in bunches and you always have more than what is needed for the recipe left over. So, instead of just wasting those in the fridge for... something, I put them under the turkey. Yes, they will soften some and the turkey can eventually get into the juices, but if you look close in the video, the turkey's already crushing the foil some and also reaching down into the pan, so some of the turkey will also be sitting in the juice.

                                                                But here's the thing: turkey doesn't stick to softened celery, carrots, and onions. Also, those are all aromatics. They will be giving off flavor to the turkey that is sitting on it.

                                                                And, at the very, very end after cooking, you can turn that whole pan out into your stock pot and you've got a great thing going already for your turkey stock for soup later.

                                                                  And yes, I realize that later on in the video, he does put various root vegetables under the turkey to cook there in the juice. You can still do something like that with having said vegetables around the edges of the bird, instead of directly underneath it. Just add them to the pan at the required time. Those other vegetables will also benefit from the addition aromatic effects.
